Mini Buttermilk Pumpkin Muffins…..

  • 1/2 c oil
  • 1 c sugar
  • 2 large eggs
  • 1 c pumpkin, mashed
  • 1/3-1/2 c buttermilk
  • 2 cs flour
  • 1 t soda
  • 1 t cinnamon
  • 1/2 t allspice
  • 1/2 c raisins, pecans or walnuts


Beat together oil and sugar. Add eggs and pumpkin: mix well. Stir in buttermilk. Combine dry ingredients and mix into batter, just until all flour is moistened. Stir in raisins and nuts. Bake at 350 degrees for 20 minutes. Makes 16-18 regular sized muffins.











I found this amazingly delicious pumpkin muffin recipe in my “old” Bishop’s Pumpkin Farm Cookbook. I think they are a perfect autumn treat, especially good with a cup of tea.
